Burlap & Barrel announces launch of two new single origin sugars: Wood-Fired Maple & Panela Cane; the former is sourced from Vermont while the latter is sourced from Colombia

QUEENS, New York , January 30, 2023 (press release) –

Burlap & Barrel, a leading purveyor of single origin spices sourced directly from smallholder farmers around the world, is launching two new single origin sugars.

Wood-Fired Maple Sugar is an aromatic and powerful maple flavor. It comes from a small family sugarworks in Vermont’s remote Northeast Kingdom. It’s made from the darkest grade of maple syrup, which is very tricky to turn into granulated sugar. It can be used instead of white sugar in baking cookies and cakes, sprinkled over oatmeal or yogurt, stirred into coffee or tea, or used in baked beans.

Panela Cane Sugar is light and fluffy and tastes warm and buttery, with a hint of fresh green cane flavor. It’s made by hand using traditional methods and materials in the lush mountains around Boyacá, Colombia. It can be used instead of white or brown sugar in baking, sprinkled over fresh fruit, or mixed with hot water to make the traditional beverage agua panela.

Burlap & Barrel Co-founder and Co-CEO Ethan Frisch explains, “Until relatively recently, granulated sugar was a rare treat. Today, what’s sold as sugar is a molecule of pure sucrose, derived from sugarcane or beets, but ultra-processed to remove all the flavor and color, leaving us to cook with a substance that’s more of a chemical than a real ingredient from the soil. That’s why, for the past two years, we’ve been working on sourcing single origin sugars from artisan producers around the world. As with all of our spices, this is about so much more than sales — we’re doing it to preserve and share traditional techniques, celebrate the diverse flavors and terroirs of heirloom sugars from around the world, and build supply chains that are able to pay producers the true value of their crops.”
