An executive at P.F. Chang’s China Bistro said they plan to open a more limited-service and pared-down-menu version of its fast-casual Pei Wei Asian Diner in Phoenix next April, Nation’s Restaurant News reported Nov. 18.
President K.C. Moylan said the test restaurant would be called Pei Wei Asian Market. The company is also looking for up to five more locations nationwide.
Moylan said that the Asian Market would be positioned to compete with fast-casual concepts such as ShopHouse Southeast Asian Kitchen, which Chipotle recently opened in Washington, D.C.
