P.F. Chang's introduces Chef's Seasonal Menu, featuring six new appetizers, two new cocktails, one new dessert

SCOTTSDALE, Arizona , April 11, 2014 (press release) – New menu celebrates flavors of the season with six shareable dishes perfectly paired with select wines, available beginning now for a limited time

Beginning today, P.F. Chang’s guests will have the opportunity to experience an array of fresh, vibrant flavors with the introduction of the restaurant’s Chef’s Seasonal Menu. The seasonal menu, available at P.F. Chang’s nationwide, features six new dishes, two new handcrafted cocktails and one new dessert.

“The inspiration for this menu came from this season’s flavorful, fresh-picked ingredients that give each dish an unexpected twist on Asian cuisine,” said Yuji Iwasa, Creative Culinary Chef at P.F. Chang’s. “The combinations of sweet and savory are sure to please food lovers of all types.”

Each of the six new dishes on the Chef’s Seasonal Menu incorporates bright ingredients such as line-caught South Pacific tuna with wasabi guacamole and vine-ripened heirloom tomatoes with zesty Asian-inspired ponzu dressing. Every dish is perfectly paired with select wines, attentively chosen to bring out the flavors of the season. P.F. Chang’s Chef’s Seasonal Menu features appetizers, entrees, desserts and cocktails including:

Appetizers

Vietnamese Lemongrass Spring Rolls: Lemongrass chicken with julienne carrots, celery root, cilantro, and peanuts wrapped in cool rice paper. Served with fresh Thai basil and mint, with a sweet chili dipping sauce

Wine Pairing: Mer Soleil Silver Chardonnay. Mer Soleil’s style of Chardonnay is big and rich, even in this un-oaked version, with an emphasis on green apple and white peaches.

Heirloom Tomato Salad: Market-fresh heirloom tomatoes tossed with avocado and Thai basil with a zesty ponzu dressing

Wine Pairing: Frog’s Leap Sauvignon Blanc. The umami-rich character of tomatoes can challenge many wines, but Sauvignon Blanc’s insistent citrus and melon powers through.
Entrées

Chiang Mai Curry Noodles with Chicken: Sliced chicken breast wok-tossed with egg noodles, Fresno peppers, cilantro and a coconut-curry infused broth. Garnished with Brussels sprouts and topped with crispy wontons

Wine Pairing: S.A. Prum “Essence” Riesling. A gentle but complex dish calls for a gentle but complex wine: Essence Riesling is that choice.

Korean BBQ Chicken Stir-Fry: Tender chicken breast stir-fried with fresh red peppers, onions and green beans in a sweet & spicy red chili sauce. Topped with a cool, refreshing kimchi slaw

Wine Pairing: Penfolds “Thomas Hyland” Shiraz. The vibrant raspberry and cherry flavors of Shiraz are ideal with stir-fried or even grilled chicken; it takes a lot of fruit to tame the red chili sauce.

Seared Ahi with Wasabi Guacamole: Yellowfin tuna, seared and served rare, topped with wild baby arugula and green beans in a chili-lime ponzu sauce. Served with wasabi guacamole

Wine Pairing: Garnet Pinot Noir. Though soft and mild, Pinot Noir’s lingering textures and flavors seek dishes with some weight, like meaty tuna.

Chino-Latino Pineapple Pork: Wok-fired tender pork in tamarind-chili sauce with red bell pepper, corn, tomatoes and pineapple relish

Wine Pairing: S.A. Prum “Essence” Riesling. Against earthy, savory flavors and Latin spice, Prum’s Essence Riesling has the fruit to tame the heat and cozy up to the pineapple.

Dessert

Ginger Panna Cotta: Served chilled with strawberry sauce, topped with fresh strawberries and julienne Thai basil. Gluten-free.

Handcrafted Cocktails

Pink Cherry Cosmo: Absolut® Citron Vodka and Cointreau® Liqueur with a squeeze of fresh lime juice and a splash of cranberry juice. Garnished with a Pink Blush cherry

Spicy Paloma: Tanteo® Jalapeño Tequila and fresh jalapeño slices are balanced with freshly squeezed white grapefruit juice
