ADM Cocoa is unveiling a new range of cocoa products with a fresh, mild fruity cocoa taste at this year’s Food Ingredients Europe exhibition. The deZaanTM Fresco Cacao range includes a cocoa powder, cocoa mass and chocolate, to give manufacturers the ability to add value and a delicate chocolate taste to products where bitter cocoa flavours can result in an unacceptable taste combination.
“At ADM we are continually developing our product range to cater for the latest consumer trends and we have identified a growing demand for chocolate flavoured ingredients with reduced bitterness to appeal to a wider audience,” comments Rinus Heemskerk, director of innovation, ADM Cocoa International. “This range is a significant evolution of our high quality deZaan cooca product portfolio and, with the variety of range, the new deZaan Fresco Cacao can be applied to such diverse food areas as dairy, cereals, confectionery, and baked goods."
The deZaan Fresco Cacao range delivers a delicious chocolate taste with reduced bitterness and can complement dairy or fruit applications. Chocolate is a popular consumer choice for chilled desserts, but manufacturers are often presented with difficulties in the formulation of chocolate in dairy applications as the bitterness of cocoa is not always compatible with the acidity of yogurts and certain fruits. To help address this problem, the technical experts at ADM have used their innovative skills to make unique chocolate and cocoa that is less bitter. The fresh, mild taste performs very well in a diverse range of applications.
The launch of the new cocoa product range concludes a successful year for ADM’s deZaan cocoa brand, having celebrated 100 years of innovation in May. The latest deZaan cocoa products include chocolate liquors made from 100 percent Ghana and Ivory Coast cocoa beans and the darkest dry powder on the market to increase the intense flavour profile of confectionery, baked goods and compound coatings and dry mixes. The deZaan Fresco Cacao range complements the wide spectrum of chocolate intensities with its mild taste and delicate, fruity undertones, allowing manufacturers to create unique innovative consumer products.

The deZaan Fresco Cacao range includes cocoa powder F11FR, the cocoa mass DZNM 7000 and deZaan Fresco Cacao chocolate.
